This recipe is a bit of a family favourite at Christmas time, it's an easy no-bake cake, that is so simple and fun to make that the kids will want to get involved! Ingredients: 600mL cream 2 Tbs caster sugar 1 1/3 packets of Chocolate Ripple Biscuits Vanilla essence (or milk.. or both!) Method: 1. Add sugar to cream and beat using electric beater 2. Generously pipe cream in a large circle shape onto your platter. 3. Dip biscuits in vanilla/milk mixture 4. Pipe cream onto 1 side of biscuit and stand upright in the cream that is already on your platter 5. Continue step 4 until you have all your biscuits on the platter. 6. Cover biscuit wreath with remaining cream. 7. Refrigerate overnight so the biscuits get soggy and delicious 8. Decorate your Christmas Chocolate Ripple Cake however you like!! Ingredients 500g Ruby chocolate 100g white chocolate melts 80g Turkish delight (rose flavour) 18g multi-coloured popcorn 60g marshmallows 50g wafer biscuits 1/4 cup pistachios, roughly chopped (plus more for top) 1/4 cup coconut flakes (plus more for top) Method 1. Melt Ruby chocolate buttons according to packet instructions in a medium sized bowl. I use the microwave at 30sec intervals, stirring in between. 2. Line a 11 x 7 in tray with non-stick baking paper. 3. In the bowl of Ruby melted chocolate add all ingredients. Be sure to break/cut ingredients into bite size pieces. Mix gently until chocolate has covered everything in bowl. 4. Pour this mixture into tray and spread out so it fills tray as evenly as possible. Don’t press down and break bits and pieces because it is meant to have a ‘rocky’ look. 5. Melt white chocolate in microwave. Drizzle, using a spoon, over the Ruby rocky road mixture. Sprinkle more pistachios & coconut all over. 6. Place in fridge until set. 7. Remove from fridge and lift out of tray. Using a warm, sharp knife cut into bite size pieces. I love making NO BAKE cookie cakes! not only do they taste AMAZING but are so simple to make! you could make this atleast 2 days in advance and is defiantly a crowd pleaser! The most important key in getting this cake right is using pure vanilla extract (NOT ESSENCE) vanilla extract gives the cream a really delicious vanilla ice-cream flavour and thats the game changer in turning it from a cookies and cream cake to cookies and ice-cream cake. lets start from my favourite cake CHOC CHIP COOKIES 10 inch tin 3 packets of your favourite choice chip cookies mine were in 400gram boxes. So 1.2 kilos of cookies!!! 1 litre heavy thicken cream (Min of 35% fat on back of label or else its not thicken cream which means it won't whip up...) 1 cup icing sugar ( this is optional if you dont want it too sweet then reduce to half a cup or nothing) 3 teaspoons of pure vanilla extract ARNOTTS CHOC RIPPLE 8inch pan 3 packets of choc ripple biscuits (250grams each packet) 600mls of thicken heavy cream 2 teaspoons of vanilla extract 1 cup sugar ( this is optional if you dont want it too sweet then reduce to half a cup or nothing) TIM TAMS 8inch 3 packets (200grams each, will have a few left over for some decoration..) 600ml thicken cream 1 cup icing sugar 1 teaspoon vanilla extract annnnddd for that chocolatey delicious mousse flavour add real good (dutch, swiss) cocoa powder 15 grams... and whip its all up till soft peaks.. a couple tablespoons of warm milk to lightly soften biscuits...if you want crunchy then skip milk... WAGON WHEEL 12inch tin 3-4 packets of wagon wheel biscuits I've only made a layer of cream which was 400mls of heavy stiff peaks whipped cream 1 teaspoon vanilla Ganache 2 cadbury milk chocolate 200grams each 1 200grams dark 70% cocoa chocolate 300mls heavy thicken cream heated pour over chocolate and stir.. GUYS IMPORTANT TO REMEMBER THESE ARE NO BAKE COOKIES CAKE SO ADJUST THEM TO YOUR LIKING!

Recipe: Chocolate Ripple Cake! -------- Start to finish: Preparation: 15 minutes Fridge: 2-4 hours (depending on biscuits) Ingredients (serves 10-12): 1 large thickened cream suitable for whipping (600ml) 1 packet Arnotts Chocolate Ripple biscuits (250g)** 1/4 cup icing sugar 1 tsp vanilla essence 1 tsp rum essence 3 tbsp water Chocolate shavings or nuts to garnish **Alternate biscuits you can use: USA: Nabiscos Famous Chocolate Wafers Canada: Mr. Christie's Chocolate Wafers UK: Apparently Arnotts biscuits are available to you (or so I've been told) Method: Place a large bowl in the freezer for a few minutes to get it super cold (helps to beat the cream faster). Mix rum essence and water while you wait. We are diluting the essence so that it isn't too strong as the flavour will develop over time the longer the cake stays in the fridge when done. Remove bowl form freezer and pour cream into it. Add icing sugar and vanilla essence to cream and beat until stiff peaks form. With a spatula, swipe a layer of cream onto your serving dish. This will serve as your foundation for placing your biscuits on. Place your first biscuit into the rum mixture and coat one side only, place this onto the cream. Spoon some cream onto the next biscuit and sandwich it together with the first one. Continue doing this until all biscuits are used. Continue using the rum mixture on about every third biscuit. you can use it more often or less depending on how strong you want it. Once the cake is assembled, use the remaining cream to cover the top and sides, using a spatula to smooth it out. Place in fridge for 2-4 hours. Time will vary depending on biscuits you use, so to check to see if it is done, use a cake skewer. It is goes in and out with little resistance then it is ready. Garnish the cake with your favourite chocolate or nuts. When serving, cut the cake at an angle so you get the biscuit/cream pattern. Enjoy! -------- Thank you for watching my cooking video. INGREDIENTS Tarts 1 X 250g Arnott’s Butternut Snap Cookies 1 X 380g tin Nestle Top N Fill Caramel 150g of Chocolate Cadbury Melts Reindeers 1 X Packet of Vanilla Marshmallows (Or plain vanilla buttercream). 1 X Packet of Mini Marshmallows 1 X Packet of Jaffa’s 1 TBSP of Vanilla ready made frosting (Betty Crocker) 1 Tube of writing icing 1 X Packet of pretzels (Star pretzels look the prettiest) INSTRUCTIONS 1. Preheat oven to 150oC 2. Place one butternut snap biscuit face down over each patty hole on a baking tray. 3. Soften the biscuits in the oven for about 3.5 minutes. 4. While still warm, press the biscuits down into the patty hole to make a pod shape. You will need to do this quickly as the bickies tend to harden shortly after you pull them out of the oven. 5. Leave biscuits to cool for about 5min. 7. Once the biscuits have cooled. Spoon one heaped teaspoon of caramel filling into each pod. (Use two actual teaspoons to make it easier). 8. Melt the chocolate melts in the microwave or over a double boiler. 9. Spread a heaped teaspoon of melted chocolate over each pod, covering the caramel. 10. Let the tarts set in the fridge for about 20min to cool down and set (Don’t place in the fridge if making Rudolph tarts as you need the chocolate to still slightly melted). Our youtube video does this part differently, but you can do it in your own way. It’s easier to prepare all your decorations in bulk before you make your reindeers. 1. Cut both normal and mini Marshmallows in half and put aside. 2. Remove tarts and gently stick one half of the larger marshmallow onto each tart to form base of the nose. 3. Stick a Jaffa onto the Marshmallow using a blotch of ready made frosting to form the nose. 4. Then place two halves of the mini Marshmallows above the nose, to form the eyeballs. 5. Dot the eyeballs using the writing icing. One drop will do. 6. Cut one pretzel in half to create an antler (Unfortunately, you will only get one from a single pretzel). Stick them above the eyes, with the pointy side facing inward. ENJOY!

This no bake cake is 3 ingredients, rich, heavenly and super fun to make with the kids. Cooking with my cousins is always a treat! They're incredibly smart, full of energy and have me roaring with laughter every time. Thanks for joining me Zac, Marcus & Ben! You’ll Need: • 2x 250g packs of chocolate biscuits (we used the Arnott's Chocolate Ripple Biscuits but any rich chocolate biscuit will work just as well) • 2x 600ml of thickened cream • 1 tsp Vanilla bean paste (you can use extract if you like or peppermint for another variation of flavour) • Toppings: Mixed berries (we chose blueberries and strawberries - but it is completely up to you) Method: 1) Add vanilla paste to thickened cream. 2) Using an electric beater, whisk up the thickened cream until it becomes nice, thick and voluminous. It should be stiff consistency. 3) Sandwich cream inbetween biscuits in a diagonal fashion on the plate. 4) Use extra biscuits to make a wider or taller cake (up to you) 5) Place the rest of the cream on top of the cake and using a spatula, smooth it out. 6) Decorate the cake using fresh fruit. 7) Refrigerate for 2 hours minimum. 8) Bon Appétit ☺ SAFETY FIRST: Always remember to be supervise kids around knives and electrical equipment! Hi guys. I wanted to share with you one of my favourite dessert recipes. Really easy to make, no cooking!! Excellent for any time of the year but especially over the festive season. To receive optimal sound effects, I recommend wearing headphones. CHRISTMAS CHOC CHERRY LOG (Makes 2 Rolls) 1 x 250g packet Arnotts Choc Ripples 2 Cadbury Flake Bars 2 Tablespoons Tawny Port (or any liqueur of choice) 1 cup roughly chopped (or halved) pitted cherries Reserve 1 to 1 1/2 cups cherry juice to thicken before serving 600ml thickened cream 1 tablespoon caster sugar 1 teaspoon vanilla extract In a bowl, whip cream together with caster sugar and vanilla extract. Set aside. Roughly chop 1 cup pitted cherries (cut them in half if you don't like them chopped up too small) Set aside in cup or small bowl. Reserve juice. Place choc ripples on a large plate and brush with port or liqueur of choice. Begin assembling log/roll by placing a little cream on tray and then covering each piece of choc ripple with cream. Place a small amount (around a teaspoon) on one side of each creamed choc ripple. Continue assembling until you have used around 10 to 12 choc ripples per log/roll. Once assembled, and with remaining cream, completely cover logs. Sprinkle with crumbled flake bars (or roughly chopped chocolate of choice). Cover and refrigerate overnight. Before serving the next day, thicken cherry juice with a couple of tablespoons of corn flour made into a paste with a little water. Place juice in saucepan over low to medium heat. When warm to hot, add corn flour paste and stir until thick. You can serve this over the roll while the thickened juice is still warm, or you can set aside and cool a little first. Bon Appetit!!! ***Substitute the cherries and port for dried apricots soaked in brandy for a few hours*** I have not tried this combination as yet, but will do over the christmas period so I will get back to everyone and let you know how it went down. :)

Enjoy this MasterFoods® Chocolate ripple crumble cake with cinnamon cream, with friends at your next dinner party. Recipe developed by Amira Georgy. INGREDIENTS 250g packet choc ripple biscuits 600ml thickened cream 1 tablespoon MasterFoodsⓇ Vanillin Sugar 1 teaspoon MasterFoodsⓇ Cinnamon Ground, plus extra to sprinkle Raspberries, to serve METHOD 1. Halve 7 biscuits. Place in an airtight container until required. 2. Using an electric mixer, beat cream, vanillin sugar and 1 teaspoon cinnamon in a large bowl until firm peaks form. 3. Spread 1/2 cup of the cream mixture along a serving platter to form a 7cm x 28cm rectangle (this is for the base). Spread a biscuit with a little cream mixture and sandwich together with another biscuit. Stand 1 biscuit upright on its edge and spread with cream mixture. Place another biscuit alongside and sandwich together. Continue layering with cream mixture and remaining biscuits to form a log. 4. Spread remaining cream mixture over log to cover completely, swirling cream. Refrigerate overnight. 5. Top cake with reserved halved biscuits. Dust with extra cinnamon. Sprinkle with raspberries. Slice cake diagonally. Serve.
